Chateau Hyot, Cotes de Castillon

Typically a blend of ~70% Merlot, ~20% Cabernet Franc, and ~10% Cabernet Sauvignon; aged ~14–18 months in French oak 

 

Nose:
Rich aromas of dark plum, blackberry, blackcurrant, and mulberry, accented with cedar, toasted spice, dried herbs, and subtle mineral notes .

Palate:
Medium-bodied with firm yet refined tannins, balanced acidity, and flavors of juicy dark fruit, black cherry, plums, earthy minerality, and warm spice. Finishes clean and structured .

Food Pairing:
Pairs beautifully with rare steak, grilled meats (beef, lamb, pork), game, gourmet burgers, and hard/aged cheeses
