Château Mouton Rothschild 2016
Grapes: Cabernet Sauvignon 83%, Merlot 15%, Cabernet Franc 1%, Petit Verdot 1%.
Nose: Highly refined, perfectly ripe dark fruit (bilberry, blackcurrant) with floral lift; with air shows pepper/spice, graphite and blond tobacco.
Tasting notes: Dark, intense cherry/red core; full, dense attack with exceptionally well-rounded, silky tannins and an ample, structured mid-palate — very concentrated and ageworthy.
Food pairing: Classic Pauillac match — roast or grilled red meats (ribeye, roast lamb), game, well-aged hard cheeses; dishes with a bit of char or pepper to balance the tannin.
