Patrick's Take: This bordeaux-style blend is big bold and beautiful winemaking- picked by hand the grapes were cooled on arrival followed by a cold maceration process to ensure that the fruit characteristics of the grape were captured prior to fermentation. A full bodied wine with layers of black fruits and hints of truffles. New wood strengthens the structure, whilst balancing tannins, fruit and acidity to add a spicy, vanilla complexity. A wine that you'll want to savor with food.
Pair with: Oxtail stew with herbs, polenta, lamb shank, spinach and mashed potato.
